So if you have not yet heard of the Beyond Meat products, you are in for a treat! They have burgers, sausages and ground “meat” products ALL COMPLETELY VEGAN! AND they are gluten free! AND they have wonderful texture! AND they taste delicious!
They use proteins from peas, beans, sunflowers, and brown rice. They add a special blend of plant based fats, minerals, and starches and the result is genius! Their products have “greater or equal protein levels than their animal counterparts, no cholesterol, less saturated fat, and no antibiotics or hormones.”
You have GOT to try this stuff!
Okay, crazy fan rave over…
The other day I got the craving for some kind of messy, flavorful and filling sandwich. I started with the Beyond Meat brat sausage then added sauteed onions and peppers. I served it on Against The Grain Gourmet baguettes and topped it with a slice of swiss cheese. This made me so happy!
I am sharing my recipe so you can be happy too! I made a sandwich out of this, however I think it would also be delicious over gluten-free pasta or rice, or maybe just on a plate with buttered gluten-free bread. Play with it and have fun!
Ingredients:
1 14 oz. package Beyond Meat brat sausages (4 links)
1 c frozen sliced onions and tri-colored pepper blend (or you can use fresh if you have the time to cut them yourself)
⅟2 t Italian seasoning
⅟2 t garlic powder
Salt and pepper to taste
4 slices of swiss cheese
Lightly coat a skillet or shallow pan with cooking oil, or spray with non-stick cooking spray.
Add onions and peppers to skillet or pan and sauté over medium-low heat until just tender (about 10 minutes).
When vegetables are close to desired doneness, push them to the sides of the skillet or pan to make an opening in the center. Lay all four sausage links in this opening.
Cover, reduce heat, and simmer for about 10 minutes, turning sausages once, until sausages are heated through.
Serve on split Against the Grain baguettes or other gluten-free bread. Alternatively spoon over hot gluten-free pasta that is tossed with olive oil and parmesan cheese.
